Bursting with black cherry, dark plum, and sweet tobacco, mingling undertones of savory spice. Packed with fruit and blanketed in silky soft tannin, offering up a rich and plush mouthfeel. Although irresistible henceforth, this will age gracefully for many years to come. Whether you enjoy now, or stash some away... you will be rewarded!
Pairs well with filet mignon, braised duck, rich pasta & wild mushrooms.
Vineyards
Roberts Road Vineyard brings lively fruit flavors and a full body, with Swan and Dijon 777 clones adding a bit of extra texture and weight. Generally riper, bolder flavors, these often do well with more heavily toasted barrels. Sangiacomo's Southern Sonoma Vineyard located in cooler climate Los Carneros adds a layer of Pommard for spice additional richness rounding out the profile.
Winemaking
Picked in the darkness of the early morning hours and immediately hand sorted, whole berries were gently delivered and cold soaked seven days extracting depth and color. Fermentations were managed via a combination of delestage and pumpovers. Further extended maceration through four weeks which fine-tuned tannin profiles, allowing to perfect mouth feel and complexity. Aged 9 months in 100% French oak, 60% of which was new.
